Bob’s Penne Ala Vodka, that’s me. Maybe not a 100% Italian recipe, but it s the recipe of a 100% Italian. That being said, I don’t believe anyone in Italy was making this 100 years ago. I always found the Penne Ala Vodka served in restaurants to be a bit heavy, so I came up with a lighter version to serve at home. I hope that you enjoy it.1 Lb Penne or Ziti
1 Pint of Heavy Cream
1/3 Cup Vodka
2 Tbsp Butter
1 Cup Grated Parmesan Cheese ( or to taste )
1/2 Cup Prosciutto or Pancetta
1/2 Small Can of Tomato Paste
1/4 Cup Peas ( Optional )
Cook the Penne or Ziti al dente drain and set aside ( put the peas in with the pasta). In the same pot, or a large pan that can hold all the Penne melt the butter. Add the prosciutto or pancetta and cook on low heat for about 2 minutes. Add the vodka and cook down until about 2 Tbsp are left. Add the cream, cheese and tomato paste, raise the heat to medium and cook until thickened 3 to 4 minutes or your choice. Add the Penne and stir until hot. Throw some chopped parsley on top as a garnish. I like mine with a Martini.
